Simple Oven Roasted Baby Potatoes

Consisting of just four ingredients, these potatoes are super easy to make and are delicious as is or dressed up!

Ingredients

  • 2 bags of baby potatoes
  • 1 tbsp extra virgin olive oil
  • salt to taste
  • pepper to taste

Instructions

  • Preheat oven to 425 degrees F
  • Wash potatoes then chop into halves. As you are chopping, put the potatoes in a baking dish.
  • Drizzle EVOO over potatoes and sprinkle with salt and pepper. Mix the potatoes with a rubber spatula and season until you think they are well coated.
  • Place the potatoes in the oven for 35 minutes or until soft, but not falling apart. (stick a fork in them or try one!)
  • Turn on the broiler and broil the potatoes for 2 minutes. Check to see if they are crispy enough. If not put in for another minute.
  • Once potatoes are crispy, take out of oven and enjoy!
