Line a 8x8 baking dish with parchment paper or foil.
In a large bowl, combine cream cheese, chicken, hot sauce, shredded cheeses, and ranch mix. Once well combined, evenly spread in the prepared baking sheet. Freeze for 1.5 to 2 hours or until solid.
Create a breading station. Using foil, pour flour on the left side, place a bowl with the eggs at the top-middle, and place the breadcrumbs on the right.
Once solid, quickly remove the mixture from the baking dish and cut vertically into 8 strips. Then cut the strips horizontally. This should give you 16 sticks.
Moving quickly, coat the sticks in flour, egg, breadcrumbs, then egg and breadcrumbs again for a thick double coating. Transfer to a plate.
In a dutch oven or cast iron skillet, heat oil to 375. Test the oil by throwing flour in it. If it bubbles, it is hot enough to fry. Working in batches, put 4 sticks in the oil and fry until brown, about 30 seconds to 1 minute.
