Chocolate Molten Lava Cake

- 1 oz semi-sweet chocolate
- 2 tbsp butter
- 2 1/3 tbsp powdered sugar use 1 tsp for the 1/3 tbsp
- 1 egg
- 1 1/2 tbsp flour
- pinch of salt
Preheat oven to 390°F.
Melt chocolate and butter together either in a double boiler or a microwave safe bowl. If you opt for the microwave, melt the chocolate in 20 second intervals and stir after each one until it is smooth.
Once the above mixture is melted, add the powdered sugar.
Separate the egg, putting the egg white in one bowl and the yolk in another. Beat the egg white, then add half to the yolk. Discard the other half.
Add the egg to the chocolate mixture. Once smooth, add flour and salt and whisk until well combined.
Pour batter into ramekins (I use 4-6 oz ramekins) and bake for 12 minutes. The edges will be set, but the center should jiggle. Cool for a minute and serve with your favorite toppings. Enjoy!
