10-Minute Skillet Enchiladas
Craving Mexican food, but don't want to put in the work? These skillet enchiladas require minimal ingredients and come together within minutes. They are full of spicy flavor and are very customizable!

Servings: 2 people
- 1 10 oz can of your favorite enchilada sauce use 6-10 oz
- 5 street taco style tortillas cut into quarters
- protein of choice
- Shredded cheese of choice Mexican, Cheddar, Colby Jack, etc.
- plain greek yogurt, sour cream, or guac
Cook your protein in the skillet. If you are cooking beef or pork, make sure to drain the fat before continuing.
While the protein is cooking, cut the tortillas into quarters and preheat the oven to 375-400.
Once the protein is cooked, add the tortillas and enchilada sauce to the skillet. Bring to a simmer for a few minutes.
Top the skillet with cheese and bake for 5-8 minutes or until completely melted. Once finished, add your favorite toppings or serve plain. Enjoy!
