Walnut Fudge Brownie Cookie (single serve)

If you haven’t heard of them by now, Crumbl is a cookie company based out of Utah, who makes large, delicious cookies inspired by popular flavors, foods, and desserts. Their cookies are mouthwatering and something you might crave every week. While I love a good Crumbl cookie and respect the company, it is not reasonable to be buying them every week. Thus, I had to come up with my own copycat cookie to satisfy my craving. 

Enter the Walnut Fudge Brownie Cookie. This cookie is a flavor that Crumbl offered a few weeks ago and I was lucky enought to try it. It tastes just like a brownie, but is softer and melts more in your mouth like a cookie. Since I loved the cookie so much, I decided to take my brownie cookie recipe and recreate this flavor on my own.

So what exactly is this Walnut Fudge Brownie Cookie? Well, it is a chocolate chip brownie cookie, topped with hot fudge and sprinkled with fresh walnuts. To add to it, the cookie is bigger than a hockey puck and is perfect for one to four people. The chocolate chips make the cookie melt in your mouth and make the cookie every chocolate lover’s dream. The brownie base gives the cookie crisp edges with the most gooey inside, that crumbles over time, but in the most least frustrating way. The hot fudge adds to the chocolaty goodness and help recreate the actual flavor of a walnut fudge brownie. Finally, the walnuts add the perfect nutty flavor and crunch that make them the “cherry on top.”

All in all, I think this cookie is perfect as is. It comes together quickly, helps satisfy your dessert cravings with little mess, and helps save you money, while providing you with that delicious Crumbl flavor. If you wanted to make some changes to the cookie, you could add a caramel topping and sub the walnuts with pecans. You could also switch out the chocolate chips or pb chips or white chocolate, then switch out the nuts with peanuts, reeses, or more white chocolate. Substitutions or no substitutions, this cookie is bound to be delicious.

Walnut Fudge Brownie Cookie

Love Crumbl, but don't have one near you or the money? Make this amazing copycat cookie. Based off the Walnut Fudge Brownie flavor, this cookie is gooey, crispy, and chocolaty-- every dessert lovers dream!

Ingredients

  • 1/4 c chocolate
  • 3 tbsp flour
  • 1 tbsp cocoa powder
  • 1/3 tsp espresso powder
  • dash of salt
  • 1 1/3 tbsp butter
  • 3 tbsp brown sugar
  • 1 tbsp white sugar
  • 1/2 egg
  • 1/4 tsp vanilla
  • chocolate chips to taste
  • your favorite hot fudge
  • chopped walnuts

Instructions

  • Melt the chocolate in the microwave for 25 second increments, stirring after each until completely melted. Set aside to slightly cool.
  • Using a handheld or stand mixer, beat the butter, brown sugar, and granulated sugar together on medium-high speed until smooth and creamy. Add the eggs, vanilla extract, and peppermint extract. Beat on high for 2 minutes. Pour in the melted chocolate and mix on medium-high speed for 2 minutes, until well combined.
  • Add the flour, cocoa powder, espresso powder, baking powder, and salt. Combine on low.
  • Preheat oven to 350°F. As the oven preheats, cover and chill the dough in the refrigerator for 20 minutes.
  • Mold the dough into one ball/disc. It will look like a hamburger. Bake for 15-18 minutes or until toothpick comes out clean.
  • Put the cookie on a cooling rack. Spread on hot fudge, then sprinkle with walnuts!
