Spicy Chipotle "Fried" Chicken Sandwich

Spicing up the weekend with this chipotle “fried” chicken sandwich. Cornflake breaded chicken, chipotle honey sauce, and buttery biscuits come together to make quite the flavor trio. These sandwiches are on the healthier side, as the chicken is not actually fried, but baked with olive oil to simulate a crispy, fried texture. The sandwiches come together in less than an hour and are perfect for lunch, dinner, or even Sunday Night Football!

If you love the classic Chick-fil-a sandwich or even their competitor, Popeyes, then you will go crazy over this Spicy Chipotle Chicken Sandwich. It is crispy, it is hot, and putting it on a biscuit takes it over the top. Like I previously stated, the chicken itself is not actually fried, but seems like it could have been. The key to making baked chicken crispy, is not only a crunchy coating like cornflakes or panko breadcrumbs, but also olive oil. Lightly brushing the chicken with olive oil adds extra crispiness, that is similar, if not the same as a fried chicken sandwich. The best part is, you don’t have to deal with a huge greasy mess, like you do when deep frying. I personally used the convection setting on our oven to help simulate frying a little more and get the chicken to cook faster. If you have an air fryer you can cook the chicken in that, as long as you achieve a fried chicken look and taste, then you are successful.

My most favorite part about this chicken sandwich is the sauce. I find myself daydreaming over it every month. The sauce is so simple, yet so perfect. All you need is some butter, honey, a lot of chipotle chili spice, garlic powder, chili powder, and paprika. While the chipotle chili takes the show, the garlic, paprika, and chili powder add extra flavoring, that prevents the sandwich from being just chipotle and quite boring. As for the honey and butter, the two ingredients help tone down the heat of chipotle chili pepper. While I like a hot sandwich, this is good for someone who likes things spicy, but not burn your mouth spicy. Also, the sweetness of the honey and the heat of the chili powders makes for one delicious flavor combo. After all, sweet and spicy is a classic.

The final component of this sandwich is the bun aka the buttermilk biscuit. While you can use a high quality bun, like brioche, for this chicken (I have and it’s still amazing), I thought it would be fun to take on some Southern flair and switch things up by making a biscuit be the bun and boy was this a good idea. The biscuit is fluffy from the butter, flaky from the folding technique, and downright delicious. The key to making a good buttermilk biscuit flaky is using a folding technique similar to what you would do for croissants. Folding the dough over multiple times creates layers that folding the dough once just can’t do. Overall, a buttery flaky biscuit paired with fried chicken may be a better combination than chicken and waffles

If you aren’t a fan of the smoky chipotle chili, then you can substitute it with cayenne pepper seasoning. Cayennne pepper will still bring the heat, but will simulate more of a Nashville Hot chicken sandwich than a basic spicy “fried” chicken sandwich. This substitution is just as good as the original. 

As for the bun, making biscuits is time consuming, so if you have a favorite bakery that makes biscuits or want to try this sandwich out on Pillsbury’s biscuits then give it a whirl! You can also scratch the whole biscuit idea and use a really good roll. My favorite roll to use for sandwiches, from burgers to fried chicken, is a brioche roll. They are buttery and perfect when lightly toasted.

Spicy Chipotle "Fried" Chicken Sandwich

Spice up your dinners with this Spicy Chipotle "Fried" Chicken Sandwich. Cornflake breading, chipotle honey sauce, and buttermilk biscuits take this sandwich over the top. This recipe will make you say goodbye to the Chick-fil-a and Popeye's drive thru's and hello to a fun and healthier chicken sandwich.

Ingredients

Chicken

  • 10 chicken thighs or breasts
  • 1.5 c buttermilk
  • 3 tsp kosher salt
  • 4.5-5 c corn flakes crushed
  • 4.5 tbsp flour
  • 1.5 tsp thyme
  • EVOO for brushing

Hot Chipotle Honey

  • 9 tbsp butter
  • 3 tbsp honey
  • 3-4 tsp chipotle chili
  • 3/4 tsp cayenne pepper
  • 3/4 tsp paprika
  • 3/4 tsp garlic powder
  • dash of salt

Instructions

  • Put chicken in a ziploc bag. Pour buttermilk, salt, and paprika over chicken. Shake the bag to ensure everything is well-coated. Refrigerate at least 20 minutes or overnight.
  • Preheat oven to 425. Line two baking sheets with foil.
  • Crush cornflakes in food processor or with a potato masher. Combine with flour, thyme, salt, cayenne or chipotle chili (both to taste), and paprika to taste.
  • Remove chicken from buttermilk and dredge in cornflake mixture, pressing down so the crumbs stick. Place on baking sheet and continue until all of the chicken has been used. Lightly brush the chicken with olive oil. Transfer to the oven and bake for 15-20 minutes, flip chicken over, and bake for another 10 minutes.
  • While the chicken is baking, make the hot honey sauce. In a pot, melt together butter, honey, chipotle chili, paprika, garlic powder, and salt.
  • When the chicken is fully cooked, brush generously with the hot honey. Serve warm with pickles or slaw. Enjoy!
