Simple Oven Roasted Baby Potatoes
After seeing my Garlic Bread Chicken Parm Sandwiches, you may wonder what we ate as our sides with that dish. Well here is one of my answers-- Simple Oven Roasted Baby Potatoes. With a flavorful dish like Garlic Bread Chicken Parm Sandwiches, you do not need to have a super flavorful side, otherwise that could take away from the main dish. To avoid this, I paired our sandwiches with side salads and these Simple Oven Roasted Baby Potatoes. These potatoes are so simple but yet so delicious and can be dressed up if you do want to add more flavor!

If you couldn't already tell, I like things on the crispier side. Thus, when making potatoes, I like to keep them in the oven longer than most people as that helps them get crispy. Thanks to my boyfriend, I learned a trick that saves time and gets potatoes to be crispier much faster.
What is the trick you may ask?! Two words -- the broiler. Putting the potatoes under the broiler for just a few minutes after they're done (fork can go through them) allows them to become super crispy. As always, don't walk away, as if you do they may get burnt to a crisp, as broilers are very powerful. I love this trick though, as it saves me at least 10-15 minutes when making potatoes compared to before!
What makes these potatoes so simple? They only require four ingredients -- baby potatoes of your choice, EVOO, salt, and pepper. While this may seem bland, sometimes salt and pepper is all you need; and honestly these potatoes are killer with just those two spices!

There are tons of baby potatoes out there that you can use as your side. I love baby yellow and red potatoes, but there are also purple ones that taste just as good. Pick any type you can find, as they will all pair well with EVOO, salt, and pepper.
Want to mix things up? Buy a medley of potatoes. Instead of just choosing one type of potato, buy the medley bag or make your own medley. This will provide you with a larger flavor and texture variety, as every potato is slightly different.
Finally, if salt and pepper is too boring for you, add some of your favorite spices. My all-time FAVORITE spice is cajun seasoning and I LOVE to put it on potatoes. It spices them up and is SO SO good when they are crispy. They're basically like fries, just in cube form. Other spices blends you can use on potatoes are Italian seasonings, like a mix of parsley, oregano, thyme, basil, and even parmesan cheese. You can also make Mexican potatoes with a blend of cumin, chili powder, paprika, oregano, cayenne pepper, and coriander. Overall, there are so many seasoning blends out there that you can put on your potatoes to "spice up" your dish.

Simple Oven Roasted Baby Potatoes
Ingredients
- 2 bags of baby potatoes
- 1 tbsp extra virgin olive oil
- salt to taste
- pepper to taste
Instructions
- Preheat oven to 425 degrees F
- Wash potatoes then chop into halves. As you are chopping, put the potatoes in a baking dish.
- Drizzle EVOO over potatoes and sprinkle with salt and pepper. Mix the potatoes with a rubber spatula and season until you think they are well coated.
- Place the potatoes in the oven for 35 minutes or until soft, but not falling apart. (stick a fork in them or try one!)
- Turn on the broiler and broil the potatoes for 2 minutes. Check to see if they are crispy enough. If not put in for another minute.
- Once potatoes are crispy, take out of oven and enjoy!
