What makes these cookie bars so great? Well, they take a classic Fall flavor, gooey chocolate, and espresso to make a coffee lovers dream treat. The chocolate chips make the cookie melt in your mouth. The pumpkin flavor is warm, with fresh notes of autumn. The espresso powder adds a bold flavor that enhances the chocolate and spices, as well as, balances the cookie bars’ sweetness. Finally, the sprinkle of sea salt creates a delicious flavor balance with the pools of chocolate.
All in all, I think this cookie bar is perfect as is. It comes together quickly, helps satisfy your dessert cravings with little mess, and is perfect for the Fall season. If you wanted to make some changes to the cookie bars, you could add chopped pecans. The nutty taste will enhance the already insane flavor profiles. You could also omit the espresso powder and just have plain Pumpkin Chocolate Chip Cookie Bars. Substitutions or no substitutions, these cookie bars are bound to be delicious.
