Peppermint Bark Brownies

If you couldn’t already tell, I love chocolate and peppermint at Christmas time. I think the two flavors compliment each other so well. So, I decided to mix my mom’s peppermint bark, with my favorite brownie recipe. Peppermint Bark Brownies are super tasty and super easy to make. They are perfect for Christmas if you want to serve peppermint bark, but want a more filling dessert. Peppermint Bark Brownies are also delicious for the winter, when peppermint is in season.

I love the holiday twist on these brownies. The brownie itself is your classic, homemade brownie. Super chocolaty, slightly fudgy, and crinkly . The key to the best brownies is to use real chocolate, as opposed to just cocoa powder. Adding chocolate not only simulates the chocolate packet you get in boxed brownies, but it gives a richer flavor to the brownies, and if you’re a chocolate lover like me, this is something you need.

On the other hand, the peppermint bark is a simple two-ingredient recipe. All the bark consists of is white chocolate and peppermint candy. I get white chocolate wafers and red and green peppermint candy from a special candy store, but a quality white chocolate and crushed candy cane would work too!

If you aren’t in the mood for peppermint, this recipe is really good plain. You could also make other variations, like oreo brownies or chocolate stuffed (using Hershey bars). All are delicious!! 

As for the brownie toppings, I feel that sprinkles are a must, as they make the brownies more festive, but peppermint candy or chocolate chips are good toppings. Even a chocolate drizzle would be delicious!

Peppermint Bark Brownies

These extra gooey peppermint bark brownies are the perfect twist on a classic Christmas dessert. They're full of chocolaty flavor and the peppermint bark taste that everyone loves.

Ingredients

Brownie Mix

  • 1 cup sugar
  • 1/3 cup cocoa powder
  • 1/2 cup flour
  • 1/4 tsp salt
  • 1/4 tsp baking powder
  • 1/2 cup butter
  • 2 eggs
  • 1 tsp vanilla
  • 1/2 cup melted semi-sweet chocolate chips

Homemade Peppermint Bark

  • 1 cup white chocolate wafers
  • 3/4 cup peppermint candy chunks

Instructions

Peppermint Bark

  • Prepare a baking sheet with parchment paper. Melt the white chocolate in the microwave for 30 second intervals, until fully melted. Add the peppermint candies, then spread on the mixture on the baking sheet and place in freezer until the chocolate is hard.

Brownies

  • Preheat the oven to 350°F and grease a 9×13 inch pan. Set aside.
  • In a microwave-safe bowl, combine the butter and chocolate. Melt in 30 second increments, whisking after each, until completely smooth. Add in the sugars, then whisk in the eggs and vanilla.
  • Add the salt, flour, and cocoa powder to the bowl. Fold it all together with a rubber spatula or wooden spoon.
  • Spread half the batter in the pan, then line the peppermint bark across the dish. Pour the rest of the batter on top, spread evenly, and sprinkle some festive sprinkles on top.
  • Bake for 30 minutes, then test the brownies with a toothpick or plastic knife. Bake in 2 minute increments if not done after 30 minutes.
  • Let the brownies cool, then cut with plastic knife to prevent crumbling. Enjoy!
