Chocolate Molten Lava Cakes

I’d be lying if I didn’t say I get my chocolate addiction from my dad. The both of us can eat chocolate desserts like its our job. So, for Father’s Day I had to make a chocolate dessert and what better than some super simple and decadent Chocolate Molten Lava Cakes. These cakes can be made in 20 minutes and are bound to satisfy your chocolate cravings. You can even add some fruit to them to make you feel a little healthier ;). In all seriousness though, berries taste great with these cakes.

You may be wondering why molten lava cakes get their name. The answer is pretty simple — the inside of the cake is similar to lava, as when you take a bite, chocolate comes gushing out. This “chocolate lava” is what makes the cakes so great. It makes them more rich and less dense, making them appealing to people who don’t like traditional cake. Plus, the lava makes the cake seem more chocolaty and prevents it from needing any icing. 

When making these cakes there is one special tool you need — a ramekin. While you could probably can make a molten lava cake without a ramekin, these dishes provide the perfect depth ensuring that there will be chocolate lava. Basically, if the dish is too small and therefore makes the cake thin, then there will be no room for lava, instead the cake will bake all the way through. Overall, if you have a ramekin then you have a super easy dessert on your hands! If you don’t, there are many ways to get creative!

The beauty of molten lava cakes is they can have different fillings. While I have only made chocolate molten lava cakes, you can incorporate peanut butter or raspberry flavors into the lava part of the cake! Both allow you to spice the original recipe up and give you a new and delicious taste. 

When it comes to how to eat a molten lava cake, there a several ways! First, you can eat the cake plain in or out of the ramekin. The chocolate lava is sooo good that it allows you to do this. 

Second, you can eat the cake with fruit! Personally, I like to eat them with raspberries or strawberries, but really any chocolate and fruit combination you like should work.

Finally, the cake can be eaten with ice cream, which is probably my favorite way to eat molten lava cakes. The warm chocolate lava pairs so well with vanilla ice cream it’s like having a hot fudge sundae with cake. YUM!

Chocolate Molten Lava Cake

Equipment

  • ramekin

Ingredients

  • 1 oz semi-sweet chocolate
  • 2 tbsp butter
  • 2 1/3 tbsp powdered sugar use 1 tsp for the 1/3 tbsp
  • 1 egg
  • 1 1/2 tbsp flour
  • pinch of salt

Instructions

  • Preheat oven to 390°F.
  • Melt chocolate and butter together either in a double boiler or a microwave safe bowl. If you opt for the microwave, melt the chocolate in 20 second intervals and stir after each one until it is smooth.
  • Once the above mixture is melted, add the powdered sugar.
  • Separate the egg, putting the egg white in one bowl and the yolk in another. Beat the egg white, then add half to the yolk. Discard the other half.
  • Add the egg to the chocolate mixture. Once smooth, add flour and salt and whisk until well combined.
  • Pour batter into ramekins (I use 4-6 oz ramekins) and bake for 12 minutes. The edges will be set, but the center should jiggle. Cool for a minute and serve with your favorite toppings. Enjoy!

    The best chocolate dessert. I started to make these once a week for me and my kids. They love how the chocolate spills out like lava.
