The Best Oatmeal Cookies
One of my absolute favorite cookies, these butterscotch oatmeal cookies are ADDICTING! One bite and you'll be hooked. I kid you not I have had probably twenty in one sitting before because they're that good. The butterscotch and oatmeal compliment each other better than any other oatmeal cookie variation I've had. They're like peanut butter and jelly, a perfect combination. What's even better about these cookies is you can make them chewy or crispy--both of which taste amazing.

I never find myself craving butterscotch candies, but when you say that something has butterscotch morsels in it I'll come running. These morsels are the star of this cookie as they are what mostly brings it all the good flavor. That and the cinnamon that is so loved in any oatmeal cookie. Another beloved trait of this cookie is it is thin and crispy. While I typically prefer a normal thickness for most cookies, like chocolate chip cookies, the butterscotch oatmeal cookie is one that stands out as thin and crisp. You can determine the thickness of the cookie based off how thick you make the cookie dough balls. If you want a thinner cookie flatten the cookie dough balls a bit, if you want a thicker cookie then leave as is. Overall, from the strong taste of butterscotch, to the crisp oatmeal bite, these cookies are 10/10 amazing. Not only do they melt in your mouth, but they make your house smell good for hours.

Want to take the flavor up a notch? Add banana! You may think this is weird, but butterscotch and banana pair insanely well together. Just substitute 1 egg for 1 cup of mashed bananas.

The Best Oatmeal Cookies
Ingredients
- 1 1/4 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp ground cinnamon I always add an extra dash
- 1 cup butter (2 sticks) softened
- 3/4 cup granulated sugar
- 3/4 cup brown sugar packed
- 2 eggs
- 1 tsp vanilla
- 3 cups old fashioned oats
- 1 package of butterscotch morsels
Instructions
- Preheat oven to 375 degrees F
- In a small bowl, combine flour, baking soda, salt, and cinnamon
- In a large bowl, beat butter, both sugars, eggs, and vanilla extract
- Gradually beat in flour mixture
- Stir in oats and butterscotch morsels
- Using a tablespoon, drop dough onto ungreased baking sheets
- If you want chewy cookies, bake for 7-8 minutes. For crispy cookies, bake for 9-10 minutes.
- Cool completely on sheets for 2 minutes then transfer to wire rack. Serve warm and enjoy!
