10-Minute Skillet Enchiladas

It’s been awhile since I’ve posted a recipe on here, but I am back! After my long hiatus, I’ve decided I’m going to switch up the recipes I make. Instead of just making recipes that excite me and that I think y’all would like, I am going to focus on comfort food, as well as quick and easy recipes for all of my followers on the go. To start things off, I have this amazing enchilada recipe. This meal takes 10 minutes to prep/cook (if that) and is scaled down for two! It’s also a little spicy, which I love!

Enchiladas are one of my favorite meals to order at a Mexican restaurant. The taste of rancheras sauce, cheese, tortilla, and shredded beef in one mouthful is just so good, I can’t stop ordering it. While enchiladas are already a relatively easy meal to make, skillet enchiladas are even easier, some might say foolproof. 

What makes skillet enchiladas a simple meal? That would be the fact that you don’t have to roll any tortillas. Rather, you cook your protein (beans, chicken, pork, beef), pour in your sauce of choice, and add chopped tortillas!! Chopped as in, cut into fourths. That’s how easy this meal is! It literally comes together in less than 5 steps.

Another thing I love about this meal is its perfect for meal preppers. If you are someone who makes a bunch of chicken for the week, but like to use it in different ways, then this recipe is for you. Since the chicken is already cooked, you can shred or chop it, then follow steps 2-5 in the recipe! It’s a perfect way to switch up your weeknight meals, while keeping thing simple.

While I made this recipe with black beans, there are a few enchilada fillings you can use instead. Specifically, you can use chicken, beef, steak, carnitas, or just cheese! When it comes to serving this skillet, you can top it with shredded iceberg lettuce, guac, and greek yogurt (sour cream sub.) or eat it plain! No matter what, these enchiladas will your craving for delicious Mexican food.

10-Minute Skillet Enchiladas

Craving Mexican food, but don't want to put in the work? These skillet enchiladas require minimal ingredients and come together within minutes. They are full of spicy flavor and are very customizable!

Servings: 2 people

Ingredients

  • 1 10 oz can of your favorite enchilada sauce use 6-10 oz
  • 5 street taco style tortillas cut into quarters
  • protein of choice
  • Shredded cheese of choice Mexican, Cheddar, Colby Jack, etc.
  • plain greek yogurt, sour cream, or guac

Instructions

  • Cook your protein in the skillet. If you are cooking beef or pork, make sure to drain the fat before continuing.
  • While the protein is cooking, cut the tortillas into quarters and preheat the oven to 375-400.
  • Once the protein is cooked, add the tortillas and enchilada sauce to the skillet. Bring to a simmer for a few minutes.
  • Top the skillet with cheese and bake for 5-8 minutes or until completely melted. Once finished, add your favorite toppings or serve plain. Enjoy!
