White Chocolate Chip Chai Cookies

Last week, I tried a Chai Latte for the first time and oh my goodness, I was obsessed! The spiced flavors were so good and I just knew I had to make a cookie recipe with the tea’s flavors. So I got to work and took my favorite white chocolate chip cookie base and adapted it. Adding in nutmeg, cinnamon, cardamom, and other spices that make a chai tea, I was able to get that spiced flavor pretty easily! I even decided to roll them in a spiced sugar, which adds the sweetest touch! Enjoy for the upcoming holiday season!!

Buttery white chocolate mixed with spiced chai flavors, makes for the most cozy cookie recipe! Perfect for Thanksgiving and the upcoming Holidays!

Ingredients
- 3/4 cup flour
- 1/2 tsp cornstarch
- 1/4 tsp baking soda
- 1/4 tsp baking powder
- 1/4 tsp fine sea salt
- 1/4 tsp cinnamon
- 1/4 tsp cardamom
- 1/4 tsp allspice
- dash of nutmeg
- dash of ginger
- dash of cloves
- 1/4 cup butter (1/2 stick)
- 1/4 cup brown sugar
- 2 tbsp granulated sugar
- 1 egg
- 1/4 tsp vanilla
- 1/3 cup white chocolate chips
Spiced Sugar
- 2 tbsp granulated sugar
- 1/8 tsp cinnamon
- 1/8 tsp cardamom
- 1/8 tsp allspice
- dash of ginger
- dash of nutmeg
- dash of cloves
Instructions
- Preheat your oven to 350F.
- In a medium bowl, mix together the dry ingredients - flour, cornstarch, baking soda, baking powder, salt, and spices. Set aside.
- In a large bowl or a stand mixer, combine sugars and butter. Mix on medium-high to cream until fluffy and well combined. Beat in the egg and the vanilla.
- Next, slowly beat in the dry ingredients. Pour in about a third at a time. Once well combined, fold in the chocolate chips.
- Cover the dough and chill in the fridge for at least 25 minutes and up to 24 hours. This helps the dough keep it's shape, which will prevent spreading and make it easier to roll in the sugar.
Spiced Sugar
- Combine the spiced sugar ingredients. Using a cookie scoop or a tablespoon, section the dough into balls and roll in the sugar until evenly coated. Place on a baking sheet and repeat until all of the dough has been used.
- Bake the cookies for 11-12 minutes. Let cool for 5 minutes, then transfer to wire rack. Enjoy warm or at room temp!
