Super Festive Gingerbread Pancakes

Pancakes are hands down my favorite breakfast food. Now that the Holiday’s are here, what better than mixing my favorite breakfast with delicious Holiday flavors. Enter gingerbread pancakes. Warm and fluffy and full of sweet spices like cinnamon and ginger, these pancakes a are sure to brighten up your morning and get you in the holiday mood.

These gingerbread pancakes taste exactly like a gingerbread cookie and make your house smell amazing. They are perfect for anyone who likes gingerbread, but not the hard cookie texture (like me) or people who want their house to smell cozy and a delicious breakfast ;). Gingerbread pancakes are also super easy to make, as they are like your basic pancake, but with the addition of molasses and a few spices. They are perfect for Christmas morning and throughout the whole Holiday season. These pancakes are best paired with a sprinkle of powdered sugar, a dollop of whipped cream, and some festive holiday sprinkles.

Super Festive Gingerbread Pancakes

Warm and fluffy, these gingerbread pancakes taste just like a cookie and are perfect for the Holiday season.

Ingredients

  • 1.5 cups flour
  • 1 tsp salt
  • 7 tbsp sugar
  • 2 tbsp baking powder
  • 1 tsp cinnamon
  • 3/4 tsp ginger
  • 1/4 tsp cloves
  • 1/4 tsp nutmeg
  • dash of allspice
  • 2 eggs
  • 3 tbsp neutral oil
  • 1.5 tbsp molasses
  • 1 3/8 cup milk
  • 1.5 tsp vanilla

Instructions

  • In a mixing bowl, whisk together the flour, salt, sugar, baking powder, cinnamon, ginger, cloves, and nutmeg. Set aside.
  • In another mixing bowl, beat the eggs. Whisk in the oil and molasses until smooth. Incorporate the milk and vanilla
  • Pour ¾ of the wet ingredients into the dry ingredients and whisk until smooth. Add the remaining wet ingredients and gently stir until incorporated.
  • Heat a griddle over medium heat. Add a tablespoon or two of butter at a time and let melt. Working in batches, ladle the pancake batter into 4 to 5-inch circles on the griddle. Cook the pancakes until set on one side and bubbles begin to form. Flip the pancakes and finish cooking on the other side for another couple of minutes.
