Peppermint Brownie Cookies

Cookies are a must during the Holiday season. Between cookie swaps and Christmas baking, holiday cookies are a big deal. Another thing that I love during the Holiday’s is anything peppermint flavored. Thus, I had to create a delicious cookie that would be perfect for the Holiday’s/winter season and include my favorite peppermint flavor. My Peppermint Brownie Cookies are fudgy, but crispy, minty and chocolaty, and overall, a perfect cookie for your Holiday season. They are seriously my favorite cookie at this time of year.

While I love plain old brownies, there’s something about a brownie cookie that is so special. The chewy edges and fudgy center are ah-maazing! They are also perfect for chocolate lovers, like myself. The cookies have a very rich flavor and can be made with either milk or dark chocolate. In this recipe, I used dark, as I think dark chocolate and peppermint pair best together, but you can use either!

When these cookies are fresh out of the oven, drizzled with white chocolate and crush candy cane, they are the best. Not only do they have that holiday look to them, but they have the perfect amount of peppermint flavor. Just enough where you can taste it, but it’s not taking away from the chocolaty notes. 

While I like to think this recipe is perfect as is, there are a few substitutions that can be made. For instance, the type of chocolate used both in the cookie and drizzled on top can be mixed up. For example, you can use milk chocolate in the dough, but dark chocolate for the drizzle instead of white. The crushed candy cane topping can also be omitted, but I like to think it gives the cookies a nice touch ;). 

This recipe can also be used for a plain brownie cookie. Just omit the peppermint extract and crushed candy cane!

Peppermint Brownie Cookies

Chewy, fudgy, chocolaty, and full of peppermint; These Peppermint Brownie Cookies are perfect for the winter season. Serve them warm to make your guests say "wow!"

Ingredients

  • 1 cup dark chocolate
  • 3/4 cup flour
  • 1/4 cup cocoa powder
  • 1.5 tsp espresso powder
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/3 cup softened butter
  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 tsp peppermint extract
  • white chocolate for drizzling
  • crushed candy cane for topping

Instructions

  • Melt the chocolate in the microwave for 25 second increments, stirring after each until completely melted. Set aside to slightly cool.
  • In a medium bowl, combine the flour, cocoa powder, espresso powder, baking powder, and salt.
  • Using a handheld or stand mixer, beat the butter, brown sugar, and granulated sugar together on medium-high speed until smooth and creamy. Add the eggs, vanilla extract, and peppermint extract. Beat on high for 2 minutes. Pour in the melted chocolate and mix on medium-high speed for 2 minutes, until well combined.
  • Add the dry ingredients and beat on low until combined.
  • Preheat oven to 350°F. As the oven preheats, cover and chill the dough in the refrigerator for 20 minutes.
  • Roll or scoop the dough into balls. Make for 12 minutes.
  • Put the cookies on a cooling rack. Melt the white chocolate, then using a fork, drizzle on the cookies. Add the crushed candy cane topping.

    These cookies taste SOOOOOO good in my mouth. I served these cookies to the whole family and everyone complimented how good these were. A new staple for Christmas Day.     OMG!! This cookie has so much sass to it as it kicks you right in the face with peppermint. I love how the creaminess of the cookie explodes in your mouth when you take that scrumptious bite. Overall great cookie!!! 10/10

    GOLLY! These cookies were quite delectable! Surely brightened my Christmas. I am sure you could enjoy during Hanukah or Kwanzaa as well!! I LOVEEEEE how the sweet and light peppermint combines with the darker brownie flavor to explode in my mouth with a bunch of flavor. Overall I would rate this a 10/10.

    OMG! These cookies are the best, so soft and fudgy like a brownie, but crisp on the outside like a cookie should be. I love the white chocolate drizzle with the candy cane. Overall, a 10/10.
