It’s Day 3 of my 12 Days of Super Bowl Recipes, and I am bringing you a good one — Extra Spicy Skillet Queso. While I love all types of Mexican dips, my favorite is queso, specifically white queso or queso blanco. I like mine to be filled with hot peppers and cheesy goodness, so I kept things simple and put 5 ingredients in this dip. From jalapenos to green chiles, your tongue may be a little on fire, but I promise it is worth it. This queso is perfect for Super Bowl Sunday and will be eaten in a flash.

Queso is all about the type of cheese you use. While some people prefer to use American, Cheddar, or some other type of yellow cheese, I prefer to use Monterey Jack, Oaxaca, or Asadero. What makes these three cheeses special is they are more authentic, especially the last two, as they are Mexican cheeses, and the cheeses are white; which I find always makes a better queso.
As for what to put in your queso, you want to make it flavorful, but also keep it simple. Personally, I put tomatoes, onions, and peppers in my queso. I probably could’ve used more peppers and less onions, but it was still really flavorful and tasty. The key to making sure the queso is flavorful is not only putting these ingredients in, but also cooking them for a few minutes before mixing in the cheese. This will soften the vegetables and bring out their aromas.

If you want to make your queso more filling, add some chorizo! It pairs super well with the above cheeses, and is slightly spicy, which makes it go great with the hot peppers.
You can also add different peppers to your queso. If you don’t like hot peppers, then add sweet peppers or a mild pepper like a poblano. If you like more heat, add a serrano pepper or a habanero!

Ingredients
1jalapeno
green chilis
1roma tomato
1/2small onion
1/3cmilk
8ozcheese16 if you are using a 10 in skillet
Instructions
On medium heat, cook the jalapeno and onions until soft, about 5 minutes.
Bring the milk to a simmer, stirring occasionally. Once milk is simmering, add the cheese in increments, stirring until it is fully melted.
Once melted, add the tomatoes and green chilis. Cook for 30 seconds.
Serve immediately and enjoy!
