Eggnog Cinnamon Roll Bites

Eggnog Cinnamon Roll Bites are the perfect mix of a flaky, buttery biscuit mixed with a cinnamon roll. They are infused with the warmth of nutmeg and the richness of eggnog, perfect for a holiday breakfast or brunch

Ingredients

Dough

  • 2 cups flour
  • 1 tbsp baking powder
  • ¼ tsp salt
  • ½ cup cold butter
  • ¾ cup eggnog

Cinnamon Sugar Coating

  • 1/4 cup brown sugar
  • 3 tbsp granulated sugar
  • 1.5 tsp cinnamon
  • 1/2 tsp nutmeg
  • ½ cup butter melted

Glaze

  • cup powdered sugar
  • 1-2 tbsp milk
  • dash of vanilla

Instructions

  • Preheat oven to 350F. Lightly grease a pie plate or baking dish with butter.
  • In a large bowl, combine flour, baking powder, and salt.
  • Cut the butter into cubes and add them to the bowl. Cut in the butter with a pastry blender until well combined.
  • Gradually add the eggnog until a dough comes together. Create a ball with the dough using your hands.
  • In a medium bowl, combine the sugars, cinnamon, and nutmeg. Roll the dough into balls and dip in the melted butter. Coat each ball in the cinnamon sugar mixture, and place them in the baking dish.
  • Pour the leftover melted butter over the dough balls and dust any extra cinnamon sugar. Bake the cinnamon roll bites for 25-28 minutes.
  • While the cinnamon roll bites are baking, make the glaze. Combine the powdered sugar, milk, and vanilla in a small mixing bowl.
  • Remove the eggnog cinnamon roll bites from the oven and let cool slightly for about 5 minutes. Add the glaze and serve warm!
