American Flag Pie
As Memorial Day approaches and you look for what dessert to make for your picnic, look no further than this American Flag Pie. This pie is super fruity and delicious, as it has a mix of blueberries, strawberries, and cherries in it. I adopted this recipe from Sallys Baking Addiction last year for July 4th and I'm not going to lie, it is probably the best pie I've ever made. It was a hit with my family. Everyone especially loved the strawberries and cherries together. The fruit keeps it both fresh and delicious!

What is the game changer of this pie?! Adding more than two fruits!! While the pie could just have blueberries on one side and cherries on the other side, adding strawberries to the mix takes the flavor to a whole nother level. When I make this pie again, I'd consider just using strawberries and cherries, as they outshined the blueberry side (which was still delicious by the way).
Enough about the filling though, lets talk crust! I used Pillsbury pie crust, as it cuts a lot of time off of the recipe and is still delicious. You can use a homemade pie crust recipe if you have one, but to me either option is good! As long as you have a crust that'll be both buttery and flaky, then you have a good pie on your hands.
Now lets talk the flag. In order to keep each side of the filling separated, fold aluminum foil up a few times. This will allow the filling to stay in place before you put the dough on top. Don't worry, the divider will be removed before you bake the pie, as it is only there for when the pie gets refrigerated.
As for the decoration, you will need star cookie cutters, any size is fine. If you are artistic enough, you can cut the stars out with a knife, it will just take a little longer! As for the stripes, just cut the dough into strips--it's super simple!

Don't like one of the fruits I used? Omit it or substitute it with a different fruit. For example, if you don't like one of the red fruits, substitute it with raspberries. As for if you don't like blueberries, you can completely omit them or use blackberries! Also, if you don't want to use multiple fruits, you can just use one! Any option works well.
If you see this pie and don't want to make a flag topping, you totally do not have to. Just cut the dough into strips to make a lattice pie top, or you can put the dough on as is and just put small slits in the middle!
American Flag Pie
Ingredients
- 2 pie crusts homemade or store bought
- 1/2 cup granulated sugar
- 1/3 cup cornstarch
- 2 cups blueberries
- 2 cups strawberries chopped
- 2 cups dark sweet cherries halved
- 2 tsp lemon juice

- 1 egg
- 1 tbsp milk

- sugar for sprinkling on crust
Instructions
- In a small bowl, stir the granulated sugar and cornstarch together.
- Put blueberries in a medium bowl.
- In a large bowl, combine the strawberries and cherries together.
- Stir 1/4 cup of cornstarch mixture into blueberries.
- Stir the rest of the cornstarch mixture into the strawberries and cherries.
- Add 1 teaspoon of lemon juice to each fruit mixture
- Place in the refrigerator while taking out one roll of dough.
- Preheat oven to 400°F
- To create the divider, fold aluminum foil several times into a 2-inch wide strip. Place into crust, dividing it into 1/3 and 2/3 sections.
- Spoon the red fruit into the larger section, leaving any excess liquid in the bowl. Spoon the blueberry mixture into the smaller section and discard any excess liquid. Place the pie in the refrigerator while you work on the flag design.
- Remove the other roll of chilled pie dough from the refrigerator. Using a knife or pizza cutter, cut 4 strips that are 2 inches wide and 6 inches long. Using your star cookie cutter, cut as many stars that can fit on the pie. This will depend on the size cookie cutter you use.
- Remove the pie from the refrigerator, remove aluminum foil strip, and add top decor to pie. Put the stars over the blueberries and the stripes over the strawberries to create an American flag design. Crimp the pie edges with a fork.
- Next, lightly brush the pie crust with the egg wash mixture. Sprinkle with sugar, if desired.
- To prevent any pie drippings from burning in your oven, place the pie onto a large baking sheet. Bake for 20 minutes. Keeping the pie in the oven, turn the temperature down to 350°F and bake for an additional 30-35 minutes.
- After 55 minutes, remove the pie from the oven and allow to cool for 3 full hours at room temperature before serving. This will allow the filling to thicken up. Enjoy!
