One of my favorite breakfasts during the holiday season, Gingerbread Pancakes are full of spice and pair perfectly with whipped cream, maple syrup, and festive sprinkles. They also make your house smell amazing, which is an added bonus!!

Gingerbread Pancakes

These Gingerbread Pancakes are warmly spiced and made with sweet molasses. Perfect for the holiday season and those who love the flavor of gingerbread cookies!

Ingredients

  • 1.5 cups flour
  • 1 tsp salt
  • 1/2 cup sugar
  • 2 tbsp baking powder
  • 1 tsp cinnamon
  • 3/4 tsp ginger
  • 1/4 tsp cloves
  • 1/4 tsp nutmeg
  • dash of allspice
  • 2 eggs
  • 3 tbsp neutral oil
  • 1.5 tbsp molasses
  • 1.5 cup milk
  • 1.5 tsp of vanilla

Instructions

  • In a mixing bowl, whisk together the flour, salt, sugar, baking powder, cinnamon, ginger, cloves, and nutmeg. Set aside.
  • In another mixing bowl, beat the eggs. Whisk in the oil and molasses until smooth. Incorporate the milk and vanilla.
  • Pour ¾ of the wet ingredients into the dry ingredients and whisk until smooth. Add the remaining wet ingredients and gently stir until incorporated.
  • Heat a griddle over medium heat and grease with butter. Working in batches, pour the pancake batter into circles on the griddle. Cook the pancakes until set on one side and bubbles begin to form. Flip the pancakes and finish cooking on the other side for another couple of minutes.
  • Serve with homemade whipped cream, festive sprinkles, powdered sugar, and maple syrup!
