Mini S'mores Cookie Skillet
Labor Day Weekend is typically the last taste of summer and what better way to celebrate than with an iconic summer treat — s’mores. While smores are delicious as is, I decided why not jazz them up a bit and pair them with a chocolate chip cookie skillet. After all, cookie skillets are so tasty and allow for the addition of ice cream. So basically, I’m just finding an excuse to have three amazing desserts in one haha. In all seriousness, this mini smores skillet is full of ooey gooey chocolate and marshmallows and a thick, chewy cookie that makes for an all around amazing dessert. My favorite part about this skillet cookie is that every bite is like sending your palate to a warm, cozy summer night.

The details of the mini s’mores cookie skillet are pretty simple. Basically, you make the dough for a chocolate chip cookie and stuff it with marshmallows, Hershey’s chocolate bars, and graham crackers. Just put down a layer of cookie dough, add as many marshmallows, graham cracker pieces, and chocolate bars as you want, then add the rest of the cookie dough. Then wait 15 minutes and voila!; you have a mouthwatering dessert on your hands.
A fun way to switch up how this cookie skillet is made is to swap the Hershey bars with Reese’s Peanut Butter Cups. Reese’s make for great s’mores, so adding them in the skillet is a game changer. Another thing you can do is pair the smores skillet with ice cream. You can keep it simple with vanilla or go for a chocolate lovers delight and pair the skillet with death by chocolate. All in all, my mini smores cookie skillet is the dessert you need at your end of summer barbecue. Everyone will love it!

Mini S'mores Cookie Skillet
Ingredients
- 1 1/3 cup flour
- 1/2 tsp baking soda
- 1/3 tsp kosher salt
- 1 stick butter
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1 egg
- 1 tsp vanilla extract
- 1 cup chocolate chips
- marshmallows
- 1 chocolate bar
- graham crackers
Instructions
- Preheat the oven to 400 and grease a small cast iron skillet.
- In a small bowl, combine the dry ingredients.
- In a medium bowl, beat the butter and sugars until creamed. Add the egg and vanilla. Mix until well combined.
- Add the dry ingredients to the wet mixture, as well as the chocolate chips. Fold until combined.
- Take half of the cookie dough and put it on the bottom of the skillet. Press it down so the whole skillet is covered.
- Add the marshmallows, chocolate, and graham crackers, then press the rest of the cookie dough on top.
- Bake the cookie for 12-15 minutes or until golden brown. Serve warm and enjoy!
