Grilled Bruschetta Chicken
There is nothing I love more than using fresh garden veggies in the summer. This new take on a classic Italian appetizer, Grilled Bruschetta Chicken, makes for the best simple summer dinner. The chicken is super fresh and can incorporate all of your summer garden goodies. The light tomato, basil, EVOO, and onion blend topped on Italian grilled chicken is SO yummy and can be whipped up in 40-45 minutes!

Bruschetta is one of my favorite appetizers. It is full of few, fresh ingredients that are delicious year round, but really shine during the summer. What makes a perfect bruschetta? 5 simple ingredients! Tomato, onion, EVOO, basil, and fresh mozzarella. Typically, bruschetta is put on bread or toast, but putting it on chicken turns it into an amazing, carb-free meal.
To make chicken that pairs well with the flavors of bruschetta, make a blend of your favorite Italian herbs. I typically mix parsley, oregano, thyme, basil, salt, pepper, and olive oil together to make a rub. I always eye the amount of herbs, but suggest you add more of whatever your favorite herb is. Personally, I find myself adding more parsley and oregano, but it is all personal preference.
To complete the chicken, fresh mozzarella is sliced and put on at the end of grilling. I personally like melting the cheese, as it creates a new flavor and makes the chicken similar to some of my other favorite meals, like chicken parm. I also find that melting the mozzarella on the chicken adds a new texture. If you were to just mix the mozzarella in the bruschetta, it would be delicious, but the cheese is going to feel different and might not mix well for some of your pickier eaters.

If you don’t want slices of fresh mozzarella on your chicken, try cubing it and mixing it in the bruschetta. This will give a slightly different flavor to the meal, as there will not be melted cheese on the chicken, but will still taste really good (and like the appetizer).
As for the chicken seasoning, there is room to play around. For example, more spices that blend well with oregano, parsley, etc. can be added to the rub. Also, if there’s another spice blend that you think will go well with the bruschetta then use that instead. The great thing about cooking is the seasonings are all based on your flavor palette. There is no right or wrong when it comes to how much you want to use.

Grilled Bruschetta Chicken
Ingredients
- 4-5 large chicken breasts, butterflied
- parsley
- oregano
- basil
- thyme
- salt
- pepper
- olive oil
Bruschetta
- 1 red onion
- EVOO
- 3 roma tomatoes
- fresh basil
- 16 oz fresh mozzarella sliced
Instructions
- Cut the fat off your chicken, then butterfly each breast in half. This will prevent the chicken from being too thick.
- Create a rub for the chicken. Eyeing each spice, mix together parsley, basil, oregano, thyme, salt, and pepper in a bowl. Then add some olive oil to create a "paste." Put the rub on each piece of chicken until they are covered and spiced to your liking. Set the chicken aside in the fridge.
- Preheat grill on medium-high heat.
- Meanwhile, make the bruschetta. Dice the tomatoes and onion, then mince the basil. Mix the three ingredients in a bowl, then add some of your favorite olive oil. I eye the amount of each ingredient, but try to make the tomatoes, onion, and basil a 1:1:1 ratio.
- Once the grill is preheated and the bruschetta is made, grill the chicken. This typically takes about 10 minutes. Once the chicken is done, put each burner on low heat, and add the sliced mozzarella. Let grill for about 2 minutes or until the cheese is fully melted.
- Next, spoon bruschetta on each slice of chicken. Add as little or as much as you want. I typically like to put enough on to cover the cheese. Enjoy!
